First Peoples Development Inc. Launches Innovative Line Cook Program
First Peoples Development Inc. (FPDI) has introduced an exciting new initiative designed to empower Indigenous youth in Manitoba through culinary education. The Line Cook Program, developed in partnership with the Manitoba Tourism Education Council (MTEC), aims to equip participants with essential skills for a successful career in the food industry.
The program spans five weeks, comprising two weeks of in-class instruction and three weeks of practical kitchen training. Participants delve into various topics, including food preparation fundamentals, cooking techniques, and plating. Additionally, they receive certification in several customer service and safety initiatives, such as CPR training and budgeting. Notably, tuition and essential items—including jackets, hats, paring knives, and food supplies—are provided at no cost to eligible participants.
The inaugural cohort of the program graduated in June 2023, with a second group commencing their studies in September 2023. Among the first graduates are 23-year-old Aleyna Harper and 19-year-old Jordan Whiteway, both hailing from communities partnered with FPDI. Harper, a member of the Island Lake First Nation, expressed her enthusiasm for the program, stating, “I really enjoyed working in the kitchen, just learning about new foods and new ways to cook things. It was so amazing.” She also appreciated the program’s broader focus, which included practical lessons in budgeting.
Whiteway, who is part of the Berens River First Nation, highlighted the hands-on learning approach as his favorite aspect. “I enjoyed that a lot because I’m a hands-on person when it comes to learning stuff and I like to be able to do things myself,” he noted. The small class size facilitated personalized attention from instructors, enhancing the overall learning experience. Whiteway added, “If you were struggling on something, they were able to help you because they didn’t have to worry about a lot of other people.”
Both Harper and Whiteway had longstanding interests in food prior to enrolling in the program. Harper began experimenting with cooking as a child, while Whiteway was inspired by his father’s culinary background. After graduating from Maples Collegiate, Whiteway seized the opportunity to join FPDI’s line cook program, eager to enhance his skills.
Upon completing the program, Harper and Whiteway were offered a six-month work experience at the new FPDI Café located in the Free Press building on Mountain Avenue. According to FPDI program coordinator Darcy Paul, both graduates have demonstrated remarkable potential. “Aleyna and Jordan were very eager to learn. They were energetic and really wanted to learn new skills and be able to practice those in the workplace,” Paul explained.
The pair expressed their excitement about working at the café, which opened in July 2023. Whiteway remarked, “It’s been amazing. I didn’t expect myself to enjoy this so much. I thought I was going to be a lot more nervous about handling different situations, but it’s been a lot of fun.” Harper added, “There’s some awesome people here that come to the cafeteria. There’s a few regulars we have, and I like to get to know them. To be honest, they make my day.”
While both Harper and Whiteway have future career aspirations, they are currently focused on honing their skills and making the most of their experiences at FPDI. The Line Cook Program not only prepares participants for careers in the culinary field but also fosters personal growth and development, making a meaningful impact on the lives of Indigenous youth in Manitoba.
