Eastern Townships School Promotes Nutrition with Free Salad Bar
A primary school in the Eastern Townships of Quebec is making strides in promoting healthy eating and community spirit through its weekly free salad bar event. Waterloo Elementary School, located in the municipality of Waterloo, has developed this initiative to provide students with access to balanced meals while fostering nutritional literacy.
Earlier this month, students returned from a morning visit to a local farm to find an abundance of fresh food awaiting them. The salad bar featured a variety of options, including lettuce, hardboiled eggs, beef, chicken, ham, cheese, tomatoes, edamame, mango, and brussel sprouts. Among the offerings, pickles emerged as a clear favourite among the children.
Cindy Elston, the school’s community involvement and personal development agent, oversees the salad bar initiative. She enthusiastically engages with students, reminding them to wear their shoes and encouraging them to explore new foods. “I dare you to go try something new,” she playfully challenged one child, embodying the supportive environment at the school.
The salad bar began as a pilot project aimed at students in Grades 1 and 2. Due to its success, it has since expanded to include all 127 students and staff at the school. Elston has been instrumental in ensuring the event remains free, stating, “I fell in love with the idea of it and was looking for ways to keep it going and make it bigger.”
Local farmers have also rallied around the initiative, recognizing the importance of providing children with healthy food options. On that recent Thursday, volunteers helped students serve themselves while chopping cucumbers and roasting potatoes, creating an atmosphere filled with laughter and learning.
Paul Sauvé, a farmer from nearby Shefford, expressed his commitment to supporting the school. After learning about the salad bar, he visited Waterloo Elementary and was moved by the community’s efforts. He has collaborated with other farmers and suppliers to provide food for special events, including an annual Christmas lunch for students and staff.
“This one lunch could inspire a spirit of good nutrition 365 days a year,” Sauvé remarked, emphasizing the need for consistent access to nutritious food for students in need. He has also pledged to donate $50,000 to the school this year, with similar commitments for the next year.
The initiative aligns with the broader goals of the Make the Season Kind campaign, launched by CBC Quebec, which aims to address food insecurity while celebrating kindness and community involvement. Elston noted the significance of nutritional literacy, stating, “We know what food does to a child’s success, it really does set them up for a positive moment or a positive day.”
As families face rising costs and inflation, the salad bar serves as a vital resource for many. Elston highlighted the challenges parents encounter in providing balanced meals at home, adding, “If we can do our part here to relieve some of that from our families, at least it’s a bonus.”
While the salad bar has proven successful, Elston acknowledges the need for a more robust lunch program. She is actively exploring partnerships with local farmers and distributors to enhance the variety and quality of meals available to students. “It’s unfortunate, but the local grocery store is expensive, so to provide more variety we’re looking at ways we can also partner with others,” she explained.
The initiative has drawn significant attention within the community of Waterloo, which has a population of just over 5,000 residents. Parents and community members have expressed their support, recognizing the positive impact the salad bar has on children’s health and academic performance.
As Waterloo Elementary School continues to champion the cause of healthy eating, the collaboration between educators, local farmers, and community members stands as a testament to the power of collective effort in addressing food insecurity and promoting well-being among children.
Through initiatives like the salad bar, the school not only nourishes students physically but also cultivates a culture of kindness and cooperation that resonates throughout the community.
